5 Easy, Quick Indian Microwave Recipes: Veg, Non-Veg

With the rising prices of gas and the inability to a gas connection easily in many parts of the country. A microwave oven is the best friend for people who've shifted to new city and living alone. Here are 5 of the most basic Indian recipes for microwave cooking you must know to fix a quick meal for yourself.

Here are five basic Indian microwave recipes I prepare for myself frequently. Definitely not very best taste-wise, but if your hungry these will do the job.

White Fluffy Rice

Take a microwave safe flat bottom container and add 1 cup of well washed rice. Add 2 cups of water. To it add few pinches of salt and 1 tablespoon of oil/ butter. Mix well with a spoon. Cover it with a lid, make sure the lid is not air tight.

Note that rice doubles in volume during cooking, so there should be enough space left in the container. Now microwave it for 15 minutes which is perfect for most white rice types. Adjust the time to vary the moisture content. After 15 minutes, keep it untouched for 5-10 minutes more. After that serve.

Masoor, Moong Dal

Wash dal 4 times till you get transparent water. Mix 1 cup dal with 5 cups of water in a large microwave safe bowl. Add salt. Microwave, covered with lid for 20 minutes until the dal is cooked. Take out carefully (its hot) and mash the dal lightly with a spoon. Add butter, ginger and garlic paste, chilli powder and the tomato purée.

Stir and mix well. Microwave for another 6 minutes. Add 1/2 cup cream for better taste (optional). In small porcelain cup add 1 tablespoon ghee/ oil with little jeera and 1 dry red chilli and microwave for 30sec. Add to dal and stir well. Sprinkle garam masala/ pepper power if needed.

Scrambled Eggs

Beat 3 eggs with 1 teaspoon salt 2 tablespoon water. Microwave 1 tablespoon butter in a microwave safe bowl for 40 sec to melt it. Take it out and spread it out inside the bowl. Add the beaten eggs mixture to this buttered bowl and microwave for 30seconds.

Take out and stir with spoon, again microwave for 30 seconds and stir with spoon. Do this for 3-4 time till it feels cooked. Optional to add chicken shreds, cheese, spring onions to the egg mixture.

Quick Shahi Chicken

Get fresh 200gms of chicken breast from the market diced into small pieces. Add 1/2 cup yoghurt (dahi), 2 tablespoon ginger-garlic paste, 2 teaspoon salt, 2 teaspoon pepper, 1 tablespoon mustard / olive oil, 1 finely chopped green chili and 1 elaichi (cardamom) and mix well.

Keep aside for 10 minutes. Cut a small tomato in 4 pieces and add to the mixture and microwave for 5 minutes. Take it out stir and add little water if needed. Microwave again for 5 minutes. Sprinkle some fresh cream and freshly chopped coriander (dhaniya) on top.

Fried Vegetables

In a microwave safe bowl, pour some oil. Add 2 teaspoons each of finely chopped ginger, spring onions and garlic. Microwave for about 2 minutes. Add 3 cups of your choice of vegetable mix (button mushrooms, carrots, bokchoy cabbage broccoli, all diced), salt and little sugar. Microwave for about 4 minutes. Take out and add quarter cup chicken stock/water 2 teaspoon each of Schezwan sauce and soy sauce (dark) .

Stir. Microwave for another 3 minutes or until the mushrooms are cooked through and have absorbed all the spices and seasonings. Just before serving, add the sesame/ olive oil, some spring onions and black pepper crushed. Stir. Microwave for another 1 minute. Stir and serve.
